Fresh, full rounded, tart and complex. The truest taste of Napa Valley, one can find.

Try it with voigniers, pinot grigios, or Rhone varietals.

20-45 days old from Spring Mtn, Napa Valley
Light and fluffy when young, with an undertoe lemon through the thin ash finish. A rich, sorrel initial palate on the older versions with a well integrated ash middle and finish. My favorite of Barbara\\\\\\\\\\\\\\\'s chevres.

Pinot Noirs. Try it with all the pinots of a certain district, such as Carneros.

24 day old goat chevre made on pasteurized goat milk from Westfield Farm, Mass
Selles sur cher in size and shape, this little blue is the preferred cheese for people who don\'t normally like blues. The blue rind is neither strong nor musty. Great balance.

Lower alcohol zinfandels, syrahs and well oaked chardonnays.

24-45 day old pasteurized goat's milk made in Healdsburg, California
Made by Pascal and Eric on their small holding at the mouth of the Russian River wine growing area, this pave is actually in the shape of a small truncated pyramid. Weigh on average 6 ounces each. We sell these at two ages: young and mild, medium and rich. I always think turkey gravy when I eat one.

The thicker rind and a tighter pate means this little chevre can shoulder up to larger wines. Try it with a Rutherford Cabernet Sauvignon, such as the Seqouia Grove 2004

A small disk weighing about the same as a Cabecou. The rinding is more sophisticated than the factory French Rocamadours, and the Petite Marcel is fortunately pure goat's milk from a single, well managed herd. Weighs about 1.4 ounces. Lives very nicely up to 8 weeks.
